Fry Day Friday

We don’t often make fried food but my husband had a craving for fried cauliflower.  To make it into a fritto misto (mixed fried food),  he included artichoke hearts and zucchini flowers from our garden. The result was amazing — a perfect way to end a Friday and start the weekend…

Using a tip from an Italian website, he added yeast and brown sugar to his usual batter of unbleached all-purpose white flour, spring water and salt. The result is a light batter that covers the vegetable with a crunchy yet fluffy coating.

I love fried zucchini flowers and artichoke hearts but the cauliflower stole the spotlight.  It had surprisingly light and refreshing flavor that complemented the delicious fried batter.  I wish we could make this the start of a new Friday tradition!
